| | 100% Syrah. Destemmed then macerated for 2 days on the skins at 5 degrees Celsius. Fermentation in stainless steel at 26-28 degrees Celsius with re-circulation and removal of the must. Lees contact in stainless steel 5 months. Some fining in bottle. | |
